Oven Baked BBQ Chicken

Ingredients
  

Overnight Marinade
  • 8 pieces skin-on, bone-in chicken thighs, drumsticks or wings
  • 1/4 cup Olive Oil
  • 1 Lemon juiced
  • 2 tsp Light Brown Sugar
  • 1 tbsp Minced Garlic
  • 1 tsp Salt
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 tsp Paprika
  • 1/2 tsp Black Pepper
Cooking Chicken
  • 1 cup BBQ Sauce
  • 1 tbsp Apple Cider Vinegar

Equipment

  • 1 Gallon ziplock bag
  • Aluminium Foil
  • Baking Sheet

Method
 

  1. Combine all seasonings and season chicken until covered.
  2. Add olive oil, brown sugar, lemon juice, and garlic in a large ziplock bag. Place chicken pieces in the bag and massage marinade into chicken. Seal and refrigerate for 24 hours.
  3. Preheat the oven to 350°.
  4. Remove chicken from bag and place on baking sheet (lined with aluminum foil). Season with a little extra of your favorite seasonings if you wish (I like to use salt, garlic powder, onion powder, and a little lemon pepper). Bake 40-45 minutes or until internal temperature reaches 165°.
  5. Turn broiler on high and roast until skin blisters, about 3 minutes. Then mix the bbq sauce and vinegar in a small bowl and set to the side.
  6. Remove chicken from oven and let rest about 5 minutes. Brush a layer of the bbq mixture on the chicken then return to the oven and broil for another 3 minutes or until bbq sauce caramelizes.
