Oven Baked BBQ Chicken

Ingredients
Overnight Marinade
- 8 pieces skin-on, bone-in chicken thighs, drumsticks or wings
- 1/4 cup Olive Oil
- 1 Lemon juiced
- 2 tsp Light Brown Sugar
- 1 tbsp Minced Garlic
- 1 tsp Salt
- 2 tsp Garlic Powder
- 2 tsp Onion Powder
- 1 tsp Paprika
- 1/2 tsp Black Pepper
Cooking Chicken
- 1 cup BBQ Sauce
- 1 tbsp Apple Cider Vinegar
Instructions
- Combine all seasonings and season chicken until covered.
- Add olive oil, brown sugar, lemon juice, and garlic in a large ziplock bag. Place chicken pieces in the bag and massage marinade into chicken. Seal and refrigerate for 24 hours.
- Preheat the oven to 350°.
- Remove chicken from bag and place on baking sheet (lined with aluminum foil). Season with a little extra of your favorite seasonings if you wish (I like to use salt, garlic powder, onion powder, and a little lemon pepper). Bake 40-45 minutes or until internal temperature reaches 165°.
- Turn broiler on high and roast until skin blisters, about 3 minutes. Then mix the bbq sauce and vinegar in a small bowl and set to the side.
- Remove chicken from oven and let rest about 5 minutes. Brush a layer of the bbq mixture on the chicken then return to the oven and broil for another 3 minutes or until bbq sauce caramelizes.
