Ingredients

  • 1 cup sharp cheddar cheese shredded
  • 1 cup monterey jack cheese shredded
  • 4 oz velveeta cheese cut into cubes
  • 1.5 lb ground beef
  • 2 tbsp butter
  • 3 tbsp minced garlic
  • 1/2 yellow onion chopped
  • 2 tbsp taco seasoning
  • 2 tsp cumin
  • 2 tsp chicken bouillon
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1.5 cup beef broth
  • 1.5 cup chicken broth
  • 1 cup whole milk
  • 1 10oz rotel with green chilies
  • 1 lb medium pasta shells

Instructions

  • Shred the blocks of cheddar and monterey jack cheeses and set aside. It needs to be room temp when added to the sauce.
  • Cook ground beef over medium high heat until browned. Drain half the grease then push the beef to the sides of the pan making a hole in the center. Add the butter. Once melted, add the garlic and onion. Cook until fragrant.
  • Add all seasonings and stir to combine.
  • Add in tomato paste and Worcestershire sauce, stir to combine.
  • Add in all remaining ingredients except for the cheese and shells, stir to combine.
  • Bring to a boil. Add the pasta then cover and cook. After 5 minutes, remove the lid, stir, and scrap the bottom to lift any ingredients settling to the bottom. Cover and cook until al dente.
  • Remove the cover and make sure the pasta is cooked. If needed, cover and cook longer until your desired doneness is obtained.
  • Turn heat low and gradually stir in the cheese until melted. Top with chives for garnish. Serve.
